Vegetarian Chili With Edamame

This Vegetarian Chili Recipe is a delicious vegan spin on your favourite chili

Ingredients

  • 2 Pieces of Onions, Thinly Sliced
  • 2 Pieces of Garlic, Chopped
  • 2 Tablespoons of Vegetable Oil
  • 2 Pieces of Yellow Bell Peppers, Seeded and Cut into Large Dice
  • 2 Tablespoons of Chili Powder
  • 2 Cans of Diced Tomatoes
  • 1 Can of Red Beans, Rinsed and Drained
  • 340 Grams of Frozen Shelled Edamame
  • 170 Grams of Long Beans, Cut into 1” Piece
  • 1 Tablespoon of Honey
  • 1 Tablespoon of Brown Sugar

 

Topping

  • 60 ml of Sour Cream
  • Cilantro, Chopped

Steps

  1. Take a multicooker, open and unlock the lid by turning the handle to the unlock position. With the lid still open, turn the handle to the lock position
  2. Pre-heat the cooker by pressing the [MENU SELECTION] button to select the [OVEN] function. Set the cooking time for 10 minutes and temperature 120 degrees then press [COOK]
  3. Pour the vegetable oil then add onions and garlic. Stir-fry until the onions are translucent. Add the bell pepper with the chilli powder into the cooker.
  4. Add all the remaining ingredients into the cooker. Season it with salt and pepper. Close and lock the lid by turning the handle to the lock position.
  5. Pre-heat the cooker by pressing the [MENU SELECTION] button to select the [MULTICOOK] function. Set the cooking time for 5 minutes and temperature 100 degrees then press [COOK]
  6. Serve with sour cream and garnish cilantro.
