Chicken and Barley Soup

Using barley in your chicken soup makes for a more nutritious dish than chicken noodle soup. Barley has a ton of fibre, which helps with weight loss and digestion.

Ingredients

  • 3 Pieces of Chicken Breast, Cut into Cubes
  • 2 Tablespoons of Butter
  • 3 Pieces of Carrots, Thinly Sliced
  • 1 Piece of Onion, Chopped
  • 2 Cloves of Garlic, Finely Chopped
  • 20 Grams of Chicken Stock
  • 550 ml of Water
  • 150 Grams of Pearl Barley, Rinsed and Drained

 

Optional

  • Fresh parsley, Chopped

Steps

  1. Take a multicooker, open and unlock the lid by turning the handle to the unlock position. With the lid still open, turn the handle to the lock position
  2. Pre-heat the cooker by pressing the [MENU SELECTION] button to select the [OVEN] function. Set the cooking time for 10 minutes and heating level 3 then press [COOK]
  3. Add butter into the cooker then place the chicken cubes and let it brown. Add the carrots, celery, onion and garlic. Stir-fry until the onion turns translucent. Season it with salt and pepper
  4. Add the chicken stock, water and barley. Let it simmer until the cooking time is finished. Close and lock the lid by turning the handle to the lock position
  5. Press the [MENU SELECTION] button so select the [MULTICOOK] function. Set the cooking time for 15 minutes and temperature 100 degrees then press [COOK] to cook the barley until its tender. Serve with parsley
