Stir-Fried Beef with Lemongrass

 Great on warm days or it makes a quick, weeknight dinner recipe

Ingredients

  • 1 Head of Broccoli, Cut into Florets
  • 1 Teaspoon of Toasted Sesame Oil
  • 4 Tablespoons of Vegetable Oil
  • ½ Piece of Red Bell Pepper, Cut into Thin Strips
  • ½ Piece of Yellow Bell Pepper, Cut into Thin Strips
  • 1 Piece of Small Onion, Sliced
  • Grated Zest of 1 Orange
  • Grated Zest of 1 lime
  • 2 Cloves of Garlic, Chopped
  • 1 Tablespoon of Ginger, Chopped
  • 2 Tablespoons of Lemongrass, Chopped
  • 300 Grams of Beef, Sliced into Strips
  • 1 Tablespoon of Vinegar
  • 4 Tablespoons of Soy Sauce
  • 1 Tablespoon of Sugar
  • Salt and Pepper to Taste

Steps

  1. Take a multicooker, open and unlock the lid by turning the handle to the unlock position. With the lid still open, turn the handle to the lock position.
  2. Press the [MENU SELECTION] button and select the [OVEN] function. Set the cooking time for 10 minutes and temperature 120 degrees then press [COOK]
  3. Add sesame oil and 2 tablespoons of vegetable oil into the cooker. Add broccoli and stir for 3 minutes. Add peppers and onion. Stir-fry until the vegetables are crisp-tender for 4 minutes. Season with salt and pepper. Transfer the cooked vegetables on to a plate and set aside.
  4. Once the cooking time is finished, add the beef into the cooker. Close and lock the lid by turning the handle to the lock position. Press the [MENU SELECTION] button and select the [MULTICOOK] function. Set the cooking time for 15 minutes and temperature 120 degrees then press [COOK]
  5. Once the cooking time is finished, open and unlock the lid by turning the handle to the unlock position. With the lid still open, turn the handle to the lock position.
  6. Press the [MENU SELECTION] button and select the [MULTICOOK] function. Set the cooking time for 5 minutes and temperature 120 degrees then press [COOK]
  7. Add the remaining 2 tablespoons of vegetable oil, zest of lime and orange, garlic, ginger and lemongrass into the cooker, stir-fry until its fragrant. Add vinegar, soy sauce and sugar. Bring it to a boil and add the vegetables. Stir to combine.
