Red Velvet Cookie Cake

This Red Velvet Cookie Cake is so easy, so good, and so perfect for Valentine’s Day or anytime you need a cookie cake.

Ingredients

Cookie Cake Ingredients

  • 3/4 Cup of Salted Butter, Room Temperature
  • 1 Cup of Sugar
  • 1 Large Egg, Beaten
  • A Teaspoon of Pure Vanilla Extract
  • 2 Teaspoons of Vanilla
  • 1 1/2 Tablespoons of Red Food Coloring
  • 2 1/2 Cup of All-Purpose Flour
  • 2 Teaspoons of Corn Starch
  • 1 Teaspoon of Baking Sode
  • 1 Tablespoon of Cocoa Powder
  • 1/2 Teaspoon of Salt
  • 3 Tablespoons of Sprinkles

 

Cream Cheese Frosting

  • 250 Grams of Cream Cheese, Room Temperature
  • 3 Tablespoons of Butter, Room Temperature
  • 1 Cup of Powdered Sugar
  • 1/2 Teaspoon of Pure Vanilla Extract

Steps

  1. Take a multicooker, open and unlock the lid by turning the handle to the unlock position. Take a pastry brush grease the inner pot with olive oil then set aside.
  2. In a separate bowl using a hand mixer, cream butter and sugar until light and fluffy for 4 minutes. Add egg, vanilla, vinegar and red food colouring and mix until well combined.
  3. In another separate bowl, whisk together flour, cornstarch, baking soda, cocoa powder and salt then add to wet ingredients, add and stir in sprinkles. Mix until combined.
  4. Take out the inner pot from the cooker and evenly press the dough. Put the inner pot back into the cooker. Close and lock the lid by turning the handle to the lock position.
  5. Press the [MENU SELECTION] button to select the [OVEN] function. Set the cooking time for 20 minutes and heating level 3 then press [COOK]
  6. Once cooked, open and unlock the lid by turning the handle to the unlock position. Let it cool completely in the pot then transfer to a serving plate.
  7. In a separate bowl, beat cream cheese and butter until smooth. Slowly add half the powdered sugar and mix until combined, then add vanilla and remaining powdered sugar and mix until smooth.
  8. Move the frosting into a piping bag and pipe the frosting onto the edge of the cookie cake and garnish with more sprinkles.
