Lentil and Kale Soup

Ingredients

  • 1 Stalk of Leek, Thinly Sliced
  • 3 Cloves of Garlic, Chopped
  • 1 Tablespoon of Olive Oil
  • 300 Grams of Sweet Potatoes, Peeled and Cubed
  • 200 Grams of Dried Green Lentils, Rinsed and Drained
  • 115 Grams of Kale Leaves, Stems Removed and Chopped
  • 20 Grams of Chicken Stock
  • 500 ml of water
  • 250 ml of Diced Tomatoes
  • 2 Tablespoons of Vinegar

Steps

  1. Take a multicooker, open and unlock the lid by turning the handle to the unlock position. With the lid still open, turn the handle to the lock position.
  2. Press the [MENU SELECTION] button and select the [OVEN] function. Set the cooking time for 10 minutes and heating level 2 then press [COOK].
  3. Add oil, leek and garlic. Keep stirring until its fragrant and soften. Add all the remaining ingredients. Season with salt and pepper. Close and lock the lid by turning the handle to the lock position.
  4. Press the [MENU SELECTION] button and select the [MULTICOOK] function. Set the cooking time for 10 minutes and heating level 3 then press [COOK].
  5. Once the cooking time is finished. If desired, you can adjust the seasoning by either adding more chicken stock or water for a more liquid soup.
