Chi Kut Teh (Herbal Chicken Stew)

Ingredients

MAIN DISH

  • 800g of Chicken
  • 2 Sachets of Chi Kut Teh Herb Mix (Can purchase from any supermarket)
  • 1 Garlic Buld, Unpeeled
  • 50g of Dried Shiitake Mushrooms, Soaked in Hot Water for 15 Minutes
  • 6 Fried Tofu Puffs, Cut Into Halves
  • 1/2 Tablespoon of Dark Soya Sauce
  • 1 1/2 Tablespoon of Light Soya Sauce
  • 1 Tablespoon of Oyster Sauce
  • 1/2 Teaspoon of Ground White Pepper
  • 1 1/2 Litres of Water
  • Salt to Taste
  • 1/2 Head of Iceberg Lettuce

GARNISH

  • Fried Shallots

Steps

  1. Open the lid and add in chicken, shiitake mushrooms, water and sachets of Chi Kut Teh herbs into the pot.
  2. With the lid open, turn the handle into the lock position, press the [MENU] button, select [SOUP] function and press [COOK]. Let pot cook for 20 minutes.
  3. After 20 minutes of cooking, add in all other ingredients (except the lettuce) and remove the herb sachets.
  4. Turn the handle to the unlock position, close the lid and turn the handle back to the lock position. Press [COOK] and let it cook for 10 minutes.
  5. After 10 minutes, turn the handle to unlock and check the final taste of the broth and proceed to adjust the seasoning according to your taste.
  6. Once done, add in the lettuce and proceed to serve with rice and fried shallots.
