Barley Casserole with Vegetables and Cheddar

A great wholesome, budget-friendly meal that includes lots of vegetables with the nutty taste of barley and a crunchy cheesy topping.

Ingredients

  • 4 Pieces of Carrots, Peeled and Diced
  • 1 Piece of Onion, Chopped
  • 2 Tablespoons of Olive Oil
  • 180 ml of Pearl Barley
  • 40 Grams of Chicken Broth.
  • 500 ml of Water
  • 180 ml of Peas
  • 180 grams of Cheddar Cheese, Shredded
  • 1 Tablespoon of Salt and Pepper

Steps

  1. Take a multicooker, open and unlock the lid by turning the handle to the unlock position. With the lid still open, turn the handle to the lock position.
  2. Press the [MENU SELECTION] button to select [MULTICOOK] function. Set the cooking time for 5 minutes and temperature 120 degrees then press [COOK].
  3. Add oil into the cooker then adds the onion. Stir until the onion is translucent.
  4. Add barley and carrots, close and lock the lid by turning the handle to the lock position.
  5. Press the [MENU SELECTION] button to select [MULTICOOK] function. Set the cooking time for 20 minutes and temperature 120 degrees then press [COOK].
  6. Once the cooking time is finished, open and unlock the lid then with the lid still open, turn the handle to the lock position.
  7. Press the [MENU SELECTION] button to select [MULTICOOK] function. Set the cooking time for 5 minutes and temperature 120 degrees then press [COOK].
  8. Add peas into the cooker and cheese. Stir until melted. Season with salt and pepper.
