Red Bean Pau

Soft and fluffy with sweet red bean paste filling, you’ll start to wonder why you haven’t tried making them homemade style!

Ingredients

  • 175 Grams of Pau Flour
  • A Pinch of Salt
  • 1 Teaspoon of Instead Yeast
  • 30 Grams of Caster Sugar
  • 90ml Lukewarm Water
  • 1 Tablespoon of Shortening

 

Red Bean Paste

  • 100 Grams of Red Bean
  • 100 Grams of Caster Sugar
  • 400ml of Water

Steps

For the red bean paste:

  1. Put the red bean and water in the rice cooker pot. Close the lid, turn the handle to the lock position, press the [MENU SELECTION] button to select [GABA] function, press [COOK] and allow to cook for 35 minutes.
  2. After 35 minutes, open the lid, turn the handle to the lock position and press [COOK] again. Add the sugar and cook until it thickens and is almost dry.
  3. Set the bean paste aside to cool before mashing it and rolling it into balls weighing 40 grams each.

 

For the Pau:

  1. On a separate bowl, mix the yeast with water and allow to bubble. Add all the other ingredients except the shortening.
  2. Combine well then put on the countertop, knead in the shortening. Continue kneading until the dough is smooth.
  3. Put the dough back in a bowl. Cover with a damp cloth and allow to rest for 60 minutes or until it doubles in size.
  4. Once it doubles in size, punch down the dough and knead for another 5 minutes. Divide the dough into 50 grams of portions, then flatten and wrap each portion of dough around a ball of red bean paste
  5. Place the finished Paus on banana leaves in the rice cooker’s trivet and allow the dough to rise for another 20 minutes, covered with a damp cloth.
  6. Pour enough water into the rice cooker. Put the steaming rack into the rice cooker, then close the lid and turn the handle to the lock position. Press the [MENU SELECTION] button to select the [STEAM] function and press [COOK]. Steam for 20 to 25 minutes.
